Quick, light, easy and filling says it all for this salad. You can’t really mess this up, it’s extremely easy to make and full of flavor from sweet, sour and salty.
What you’ll need:
1 head of butter lettuce
Queso Fresco (optional)
Rice vinegar for dressing
Coarsely ground sea salt
Freshly cracked pepper
In a bowl add:
1. Peeled grapefruit, sliced into small bite size pieces (remove as much white pith as possible)
2. Avocado(s) sliced into small bite size pieces
3. Chopped butter lettuce
4. Crumbled Queso Fresco
Season with rice vinegar and add salt and pepper to taste.
