Chèvre Stuffed Chicken Breasts

I saw this recipe on Grilling Companion. Of course our grill was out of fuel, so I did a baked version instead and it turned out spectacular. I had full attention from Ruby and Layla (our dogs) the entire FIVE minutes it took for me to prep the meat and pop it in the oven. This is a great meal if you are short on time or would prefer to spend the evening relaxing, instead of running around the kitchen. We caramelized some onions and sauteed up some yellow squash and zucchini to go with the chicken. Absolutely delicious!
